Inspector determined the person in charge did not demonstrate adequate knowledge of food safety. Inspector observed spoiled beef/steak in the walk-in cooler; raw animal foods stored above ready-to-eat foods in the walk-in cooler; various dressings held at too high a temperature (voluntarily disposed of); refrigerated ready-to-eat food not being date marked; walk-in cooler not maintaining required temperature; and sanitizer test strips or test kit to determine appropriate sanitizer concentration not available. Observed a black and pink mold-like substance on the interior surfaces and tubing of the ice machine, a buildup of old food and old food residue in the microwave, a buildup of old food residue on the manual can opener blade and dirty knives on the magnetic mounted knife holder. Observed tongs and strainer, in kitchen area, with an accumulation of dust, dirt, food residue, debris on non-food contact surfaces; a buildup of old food residue on the handles of stove, top rim of bain marie and shelving of cook line; soap unavailable at the handwash sink in the bar area; no single use towels, continuous towels or air drying device at the handwash sink in the bar area; and the kitchen area was extremely dirty, dusty, and in need of cleaning.
